Heat Chicken chili

Introduction

This recipe can be vegan as well just add more beans and remove the chicken. Also if you don't like major heat leave out the Tabasco and use plain diced tomatoes. Enjoy! Ingredients

    2 Chicken breasts diced
    1 Green pepper chopped
    1/2 Yellow pepper chopped
    1/2 Orange pepper chopped
    1 medium onion chopped
    3 garlic cloves minced
    1 1/2 tablespoons fresh Cilantro minced
    1 14.5 oz can Diced tomatoes with Green Chilis
    1 6 oz can Tomato Paste
    3.5 cups water
    1 Cup Black beans rinsed
    1 cup kidney beans rinsed
    1 tablespoon Olive oil
    SPICE BLEND
    2 tablespoons Chili powder
    1.5 tablespoons Cumin
    1.5 tablespoons Paprika
    1 tablespoon Onion Powder
    1 Tablespoon Oregano
    1 teaspoon black pepper

Directions

Start by prepping your chicken and vegetables. Combined all the dry spices in a sautee pan and turn heat on to medium begin toasted spices and vigorously mix so they don't burnabout 2 minutes, this releases the flavor more. Put Oil in bottom 6 quart Sauce pan and heat up on medium high flame add chicken and just cook long enough to have color on all sides, add 2 tablespoons of spice blend. Add in garlic and Cilantro and two more tablespoons of spices. Add remaining vegetables cook until onions are tender. Add the diced tomatoes and simmer 4 minutes add tomato paste and water. Stir, add remaining spices. Reduce heat to medium low simmer 1 and 1/2 hour.

Makes 6.5- 1.5 cups servings
