Cold Thai Spaghetti

Ingredients

    Whole Wheat Spaghetti, cooked (pasta), 1 Pound
    Peanut Butter, smooth style, 1/4 cup
    Warm Water, 1/4 cup
    Honey, 1 tbsp
    Soy sauce (tamari), 1/4 cup
    Garlic, 2 cloves
    Lime Juice, 2 lime yields
    Lime Zest, 1 lime
    Hot Sauce, 1 tsp
    Canola Oil, 3 tbsp
    Roasted Chicken, light meat, 2 cup, chopped or diced
    Carrots, raw, 1/2 cup, grated
    Scallions, raw, 4 small, chopped
    Spinach, fresh, 1 cup
    Peanuts, oil-roasted, 1/4 cup, chopped
    Cilantro, raw, 2 tbsp

Directions

Boil Spaghetti until al dente. RInse under cool water drain well and put aside

Mix together Peanut Butter, Warm Water and Honey in a large bowl. Add Soy Sauce, Garlic, Lime Juice, Lime Zest and Hot Suace. Add Oil while continuing to mix.

Add Spagheti Noodles, Vegetables and Peanuts to sauce and mix until well coated

Portion out into bowls and garnish with Chicken and Silantro
