Mexican Calzone

Introduction

Ground beef, peppers and onions are sauteed together with cumin and chili powder, then mixed with crushed tomatoes. Finish with a blend of Mexican style and mozzarella cheese, for a perfect cheesy filling.

Number of Servings: 10

Ingredients

    Dough:
    1 cup water
    1 1/2 tbsp olive oil
    2 cups plus 2 tbsp flour (can use white or 1/2 whole wheat, 1/2 white)
    1 1/2 tbsp sugar
    3/4 tsp salt
    2 tsp yeast
    2 tsp cumin
    2 tsp chili powder


    Filling:
    4 1/2 oz lean ground beef
    1/2 cup chopped sweet red pepper
    1/2 cup chopped onion
    1/4 cup chopped jalapeno peppers (take out seeds and veins to make less spicy)
    2 tsp each, cumin and chili powder
    1/2 cup crushed tomatoes
    1/2 cup shredded, Taco style cheese
    1/2 cup shredded, Mexican style cheese
    1/2 cup shredded, fat free mozzarella cheese

Directions

Put all dough ingredients in the bread machine, as per instructions, set to dough cycle.

In a saute pan brown the ground beef, when cooked but not crispy add veggies and spices. Cook until peppers begin to soften, then add the crushed tomatoes and mix in the cheeses. Remove from heat and let cool.

When dough is ready, knead on a floured surface and shape into a large circle. Put dough onto lightly greased pan. Place filling on one half of the circle, leaving a 1/2 inch border around the outside. Fold the other half of the dough over the filling and seal the seams.

Bake calzone at 350F for 30 min, or until the crust is evenly browned.

Makes 1 calzone that can be cut into 10 slices

Optional:
Add 2 tbsp of cornmeal to the flour in the dough of the pizza crust.
Use taco sauce instead of crushed tomatoes in the sauce (will increase salt and calories)
