Chicken Paella

Ingredients

2 chicken breasts, cut up into bite size pieces
1 onion chopped
1 1/2 cup rice
4 cups stewed tomatoes (I used my own canned tomatoes, but if you dont have this, then use 2 cans of stewed tomatoes)
1 tbs olive oil
1 can chicken broth
enough water to cover the rice
1 red or green pepper, sliced
1 cup frozen peas.
Directions
In a skillet, heat oil, add rice, and stir to brown a bit. Add tomatoes, onions, broth and water to cover. Bring to a boil. Add chicken and cover. Simmer for 15 minutes. The last 5 minutes add the red pepper and peas. Makes about 10 1 cup servings.
