chicken n cheddar soup - low fat, low salt version

Number of Servings: 4

Ingredients

    2 tsp unsalted butter
    1/2 cup celery diced
    1/2 cup onion diced
    1/2 cup carrots diced
    2 tbsp flour
    1 can low sodium chichen broth
    1/2 cup 1% milk
    1/2 cup peas
    2 oz low fat cheese
    4 oz cooked chicken, diced
    dash of pepper
    1 cup cooked rice

Directions

Heat butter until bubble and hot.
Add celery, onion, and carrot.
Cook over medium heat stirring occasionally until veggies are tender.
Add flour and stir quickly to combine.
Gradually stir in chicken broth stirring constantly. Bring to a boil.
Add peas and cook for 3 minutes.
Recuce heat and add milk and cheese stirring constantly until cheese is melted.
Add rice.
Cook stirring occasionally until thoroughly heated.
