Sweet and Spicy Potato Oven Fries

Sweet and Spicy Potato Oven Fries

Introduction

A great tasting and healthy alternative to fries. A great tasting and healthy alternative to fries.
Number of Servings: 2

Ingredients

    1 large sweet potato
    Cooking spray
    1 teaspoon sugar
    1/2 teaspoon salt
    1/4 teaspoon ground red pepper
    1/8 teaspoon black pepper

Directions

-Preheat the oven to 500 degrees

-Peel and chop the sweet potato into strips or wedges.

-Add to a medium bowl with the potato wedges the next 5 ingredients (cooking spray, sugar, salt, ground red pepper, black pepper). Toss well to coat.

-Arrange potatoes on baking sheet in a single layer. Bake for 10 minutes, flip the potatoes and bake another 10 minutes, until tender and browned.

Makes 2 servings.

    Sweet potato fries are the best!
    To save energy (and kitchen heat w/500 degree oven) just parboil your sweet potato for a few minutes in water. Let it cool, peel and cut into bite sized pieces. Mix with seasonings and cook in 350 oven for 10 minutes or until they are fork tender. - 8/12/09

    I make these numerous times a week, have been for LONG time! To make cooking time shorter and cutting easier, I nuke my sweet potatoes in the microwave for about 30 seconds or less (any more and they mush like baked potatoes) I also preheat the pan in the oven so they dont stick to the pan. ;) - 10/16/09

    I've made these for a while now, not only for all the good stuff sweet potatoes contain, but because my husband loves them too! I bake in my toaster oven @ 425' for 30 min, flipping after 15 min. I HATE "sweet" potatoes, so I use only olive oil and salt, with organic catsup to dip. - 9/19/09

    Sweet potatoes are grown in abundance where I live so I cook with them often. If you don't like them spicy, try chopping some fresh rosemary on top and then during the last few minutes of baking, sprinkle some Parmesan cheese on top. Also, there is no need to peel them. - 12/10/09

    I never add sugar since they have natural sweetness. I like these with TONS of cumin (maybe 2 tsp for ONE s.p.) even better than paprika (probably use 1 tsp -- I don't measure, I go by eye). - 9/19/09

    SERIOUSLY yummy! I followed the advice here and boiled for about 15 minutes, cooled down, peeled and put in the oven @ 350 for 10 minutes, turned over, then another 10 minutes. MY NEW FAVORITE FOOD! - 11/5/09

    I toss in a little bit of olive oil. Instead of par boiling, try microwaving 3/4 of the way - cuts the baking time way down and keeps them tender on the inside while crispy on the outside - 1/26/10

    I love this recipe! I toss the potatoes in a plastic bag w/oil & salt so no bowl to clean. Put the fries on a cookie cooling rack on top of the baking sheet to bake. Delicious! Going to try this today w/regular potatoes since I don't have any yams & w/out peeling. - 11/7/09

    I made some adjustments - garlic salt instead of plain and 1/4 tsp. instead of 1/2. I also used cajun seasoning and eliminated the red pepper since I didn't have any. I baked at 400 degrees for 20 mins. Very good but hard to resist. Will make again, but only one portion at a time. - 10/17/09

    I have a pepper allergy, so left both the peppers (and salt) out - substituted seasoning salt instead, which worked really well for us.
    My husband hates sweet potatoes !00%, but loved these - he thought they were carrots so we let him think that's what he ate. Now he wants them all the time! - 9/27/09

    I switch up the spices and cooking methods for variety, but I do not add any sugar or other sweeteners. It's a tasty "healthy french fry" that is allowed on my table and even the grandchildren like them. - 9/18/09

    I'm kind of HORRIFIED that SparkPeople would add sugar to a recipe where the sweet potato is already NATURALLY SWEET. I always toss sliced sweet potato with olive oil, but will add some of these spices next time before baking, NO SUGAR NECESSARY. Let's keep it as healthy as possible, right! - 3/22/11

    We call them kumara. Kumaras are VERY versatile and yes, kumara chips are best:) Try boiling them and and mixing them with mashed potatoes - yummy! - 9/29/09

    I love sweet potatoes, and I modified these to coat them in a mix of cayenne pepper, paprika, salt, garlic powder, sugar, and a teeny bit of cinnamon. They were delicious! I didn't make them too spicy, but you could if you're a big spicy food fan and they make a great addition to a meal. Yum! - 5/29/10

    Yummy.... I tried this with parsnip and sweet potatoes too.... (I didn't boil the parsnip and baked it at 425 degrees not 500). I also like to add some herbs too, I added oregano. The potatoes taste great with a sprinkle of fresh squeezed lemon juice :) - 5/18/10

    I love Sweet Potatos! I pre-bake a little in the Micro. I then heat up the oven and bake them for about 20 - 30 minutes. I add a mixture of seasonings. Brown Sugar, Cinnamon. Low fat or fat free sour cream for dip. Yummy as a side dish for Chicken Breast! - 5/16/10

  • I have been making this recipe for awhile except that I roll them in olive oil and use salt and basil and oregano. I bake them about 35min. @ 400. I cut them like fries. They are very good. Just made them last night. We don't care for sweet potatoes any other way. - 1/12/14
