Introduction

Top this soup with toasted tortilla strips and serve with lime wedges and avocado slices. Top this soup with toasted tortilla strips and serve with lime wedges and avocado slices.

Ingredients

    16 ounces extra lean ground beef
    1 small yellow onion, chopped (about 1/2 cup)
    1 recipe Taco Seasoning

    1 (14.5 ounce) can no salt added tomato sauce
    1 (14.5 ounce) diced tomatoes with green chilies
    1 (14.5 ounce) dark kidney beans, drained and rinsed
    1 cup frozen or canned corn kernels
    1/2 cup chickpeas, drained and rinsed, mashed

Tips

Just before serving, squeeze in the juice of half a lime for a kick.


Directions

Brown the ground beef and onion in a large saucepan over medium heat. Blot any excess grease with a paper towel, then add the taco seasoning. Cook for one minute, then add the tomato sauce, diced tomatoes, kidney beans, and one cup water.

Reduce heat to medium-low, and simmer for 10 minutes.

Add the corn and mashed garbanzo beans, and simmer five more minutes.

Serve immediately. Makes six (1 cup) servings.

    I haven't made this just yet, but did want to point out something. In the video, Chef Meg adds the juice of 1/2 a fresh lime, just before serving. I did not see that listed here. This looks so yummy. I hope I have everything so I can make it tonight. - 8/11/09

    I made this recipe without any alterations. It is more of a Taco Stew, but it's delicious. We had it with "Elaine's Healthy Cornbread" and it was a hit with my family. My husband had 3 servings. Can't wait to make it again. - 9/24/09

    I would make this but substitute Morningstar Crumbles for the ground beef. Also, when I do use ground beef, instead of merely "blotting," I drain all the fat and then rinse the cooked meat while it's in a colander. Meg should advocate that. - 8/7/09

    i loved this. i couldn't believe after i cleaned the pot there was absolutely no greasy residue. it had so little fat, but so much flavor. i was really skeptical of using the mashed garbanzo beans but youu couldn't even taste them at all. i am looking forward to the next chef meg recipe. - 8/15/09

    Video adds 3 cloves garlic in with taco seasoning.
    Sounds delish! Would make a great Sunday lunch if made ahead of time. I'd add cilantro leaves to soup towards end of cooking time... about the time you add lime juice. Then top with avocado slices instead of cheese for a healthier fat. - 10/22/09

    Every one of my kids loved this soup, and so did I! That earns it 5 stars. I used a 19 oz can of (original) diced tomatoes. The ones with chilies are not available here. I also used the packaged taco seasoning, the 40% reduced salt version. I didn't drain the kidney beans. - 1/10/10

    I made this last night and it was so tasty! I didn't have the green chiles, and I used a can of enchilada sauce instead of the tomato sauce. I also used black beans instead of kidney. I used Emeril's Southwest seasoning and put some cilantro in while it cooked. SO tasty! Comfort food! - 5/20/10

    This is a thicker soup, more like a chili. But it was delicious. I used low sodium taco seasoning and regular chili beans instead of kidney beans. The kids even liked it.

    I used a taco seasionong mix Old Elpaso original. We really liked it. I'm going to try Chef Megs taco seasoning next time. I also add a little water to thin the soup down a bit. Incredible flavor. We both love this one. - 10/31/09

    Looks tasty and I plan to try it: but the recipe is sloppily put together -- it references the taco seasoning that isn't given here (but a reviewer supplied it) and it includes 14 oz tomato sauce but then says to add the tomato paste ?? someone mentioned it might/mightnot have lime? - 1/5/10

    Fantastic! The directions were not confusing at all (the recipe for Chef Meg's taco seasoning is in the spark people recipes, people!) I used ground turkey, though, and a packet of reduced sodium taco seasoning. - 10/2/10

    The sodium is still pretty high as someone was concerned with but you can use low sodium canned beans which are sold in a few varieties like Goya or make your own. Also canned organic tomatoes tend to have less sodium as well. Looks yummy and very similar to a chili recipe. Plan on trying! - 9/29/10

    This is a great basic soup that can be spiced up to suit your own tastes. I like a little kick so I added 2 TB of minced garlic. I also used a prepackaged taco seasoning and added a generous amount of cumin, cracked black pepper, and tumeric. LOVE IT! - 8/17/10

    I enjoyed this recipe, very satisfying. Mine came out basically as chili. Tiny bit o sour cream. Luxurious.
    My problem is that there are ingredients listed in the ingredient list that differ from the recipe ie. tomato paste and tomato sauce. Very confusing! - 6/19/10

    I use lean ground turkey or vegetarian refried beans to keep the recipe vegetarian. If the aim of the game is the lower sodium, why not use no salt added canned tomatoes? You're adding a 4 oz can of green chiles anyway. - 5/21/10

    Funny to fine this. I used another version on the site and made almost these same changes...rinsing beans (although I used kidney and black), frozen corn and using my spice cabinet. It was awesome. - 10/25/09

  • I made a double-batch of this last night using Chef Meg taco seasoning recipe. Tip: do not double the seasoning, add 50% more to recipe. I doubled it and it was way too hot for the fam. I love spicy food & thought it was just right, though! Add 3 minced garlic cloves, no added salt needed. Perfect! - 8/7/14

  • Amazing! I made mine with what I had on hand. used NWHIKER's recipe + turmeric. Instead of tomato sauce, I used 2 cans of diced roasted tomatoes and substituted Garbanzo beans for regular beans.   • My sister makes this recipe all the time--however, to eliminate some of the sodium, eliminate the taco seasoning and add cumin chili powder, garlic powder and onion powder. I find it to be excellent as a good source of fiber. - 4/11/13

  • Due to my IBS, I need low-fat as well as gluten-free. Would it be possible to compute the nutritional information using ground chicken or turkey? Pureeing the kidney beans and garbanzo beans would help w/the insoluble fibers contained in them. - 8/28/12
