Fiber-Rich Muffins

Introduction

Number of Servings: 12

Ingredients

    1 c. whole-wheat flour
    1/4 cup all-purpose flour
    2 Tbs. sugar
    1 Tbs. baking powder
    1/4 tsp. salt
    1 c. Fiber One cereal
    1 c. nonfat milk
    1 egg
    3 Tbs. nonfat plain yogurt
    optional: cinnamon, apple pie spice, pumpkin pie spice, nutmeg, extracts

Directions

Stir together flours, sugar, baking powder, and salt.
In a large bowl combine Fiber One and milk. Let sit 2 minutes. Add egg and oil and beat well.
Add dry ingredients to wet, be sure not to overmix.
Bake at 400 degrees for 20 minutes or until lightly browned. Serve warm.
Makes 12 servings.
