Introduction

This recipe is so simple and good! Even my husband who hates Indian food really likes this. It has a great tomato base, which can be diluted by adding more sour cream. Add any vegetables or spices you like and serve with rice or naan! This recipe is so simple and good! Even my husband who hates Indian food really likes this. It has a great tomato base, which can be diluted by adding more sour cream. Add any vegetables or spices you like and serve with rice or naan!

Ingredients

    1/2 lb chicken breast- chopped into 1" cubes
    1 6oz can tomato paste
    1/2 cup fat free sour cream
    Curry powder- to taste
    2 cloves garlic- minced

    Optional seasonings-
    Cumin powder
    Onion powder
    Ginger
    Nutmeg

Directions

Rinse chicken breasts and chop into small cubes.
Throw into a nonstick skillet (otherwise use a tbsp of butter to keep from sticking) over medium heat.
Add tomato paste and stir in sour cream. For less tomato taste add more sour cream.
Add curry powder and garlic to taste, as well as any other seasonings you want.
Cook over medium heat until chicken is cooked through.
Serve with rice or naan and enjoy!
