Introduction

A cracked wheat salad which can be a vegetarian meal or a side dish. A cracked wheat salad which can be a vegetarian meal or a side dish.
Number of Servings: 8

Ingredients

    1.5 Cups Cracked Wheat (Bulghur)
    1.5 Cups Boiling Water
    1/3 cup lemon juice
    1/3 cup olive oil
    1 cup parsley (chop after measured)
    2 Tbsp. mint
    1.5 cups chopped cherry or grape tomatoes
    Salt to taste (1/2 tsp- 1 tsp)

Directions

Put bulghur in a large bowl. Pour boiling water over it, stir, and let it sit for 20 minutes to absorb all the water. While the bulghur is soaking, chop the parsley, mint, and tomatoes. When bulghur is ready, stir in all the ingredients and salt to taste. Serve immediately or refrigerate. Both ways are great!
