Chicken & Yellow Rice

Ingredients

    boneless skinless chicken breast (4)
    2.5 cups chicken broth (more if necessary)
    1 medium onion cut into slivers (NOT CHOPPED)
    Vigo yellow rice (I Prefer Vigo)
    1 tsp adobo goya seasoning

Directions

Cook chicken, onion in chicken broth with seasoning until chicken done and onion tender on med. high (about 20 minutes) if broth gets low add more 1/8 cup at a time.
When chicken done you want there to be 1 cup of broth left.
Add in whole package of rice mixture and cook per package directions.

Makes 4.5 servings
