Sweet Balsamic Black Bean Salad

Introduction

Ingredients

    1/2 cup green bell pepper, chopped
    1/2 cup yellow bell pepper, chopped
    1/2 cup orange bell pepper, chopped
    1 cup roasted red bell peppers, drained and chopped
    1 15 oz. can black beans, drained & rinsed
    20 halved grape tomatoes
    2 tablespoons fresh parsley, chopped
    1 teaspoon garlic, minced
    1 teaspoon dried basil
    1 tablespoon Splenda or 1 packet Nutrasweet, or 1 tablespoon traditional sweetener
    1 tablespoon Worcestershire sauce
    3 tablespoons balsamic vinegar
    1 bag (1 lb) Mixed Salad Greens, rinsed

Directions

In large bowl combine peppers, beans and tomatoes.

Combine remaining ingredients in a jar.

Shake well.

Pour over vegetables and gently toss.

Cover and refrigerate at least two hours (overnight is better!).

To serve, place mixed greens on salad plates and top with pepper/bean mixture.

Enjoy!

    This is spectacular!! I added green onion (red onion would be better) and more garlic. I served it with sliced steak over the top, but had it for lunch the next day without the steak. Both ways, it was a great recipe. I will DEFINITELY make this again!!! - 6/28/07

    A very tasty recipe which includes two of my favorite ingredients, black beans and balsamic vinegar. I enjoyed the flavor combination of the worcestershire sauce and balsamic vinegar with the variety of spices/seasonings, but preferred to omit the "sweetener" (Splenda). - 10/18/10

  • My Wife and I had this for lunch today. I made it yesterday and thought it was great on our vegatable lovers salid. Great flavor, great taste, and great to snack on while puting it together. We thought adding onion and whole kernel corn next time will make a great change. - 10/24/10

  • Sounds fabulous. The Worcestershire sauce and canned roasted peppers will be the sodium culprits. Fresh chopped red bell peppers would take care of one and a whole tablespoon of Worcestershire sause is a heck of a lot - half that would do, especially with a little chopped red onion - good idea! - 10/22/10

  • GRAMPIAN--here in the U.S., grape tomatoes are a pretty small, fingertip sized tomato, whereas cherry tomatoes are a little bigger--the size of a golf ball. Also there's a tiny bit of difference in the taste--grape tomatoes are a bit sweeter to my taste. They can both work. - 10/18/10
