Sweet Balsamic Black Bean Salad

Ingredients

1/2 cup green bell pepper, chopped
1/2 cup yellow bell pepper, chopped
1/2 cup orange bell pepper, chopped
1 cup roasted red bell peppers, drained and chopped
1 15 oz. can black beans, drained & rinsed
20 halved grape tomatoes
2 tablespoons fresh parsley, chopped
1 teaspoon garlic, minced
1 teaspoon dried basil
1 tablespoon Splenda or 1 packet Nutrasweet, or 1 tablespoon traditional sweetener
1 tablespoon Worcestershire sauce
3 tablespoons balsamic vinegar
1 bag (1 lb) Mixed Salad Greens, rinsed
Directions
In large bowl combine peppers, beans and tomatoes.
Combine remaining ingredients in a jar.
Shake well.
Pour over vegetables and gently toss.
Cover and refrigerate at least two hours (overnight is better!).
To serve, place mixed greens on salad plates and top with pepper/bean mixture.
Enjoy!

Sounds fabulous. The Worcestershire sauce and canned roasted peppers will be the sodium culprits. Fresh chopped red bell peppers would take care of one and a whole tablespoon of Worcestershire sause is a heck of a lot - half that would do, especially with a little chopped red onion - good idea! - 10/22/10
