Whole Wheat Pizza Dough

Ingredients

1.5 Cup White Flour
.5 Cup Wheat Flour
.5 Cup Non-fat Milk
.25 Cup Water
3 tsp Active Dry Yeast
.25 tsp Salt
Directions
-Prepare the "sponge" in a large bowl
-Add warm water
-Add yeast over the water, mix
-Add 3/4 c. all-purpose flour, mix hard
-Cover loosely with plastic wrap of a damp towel and let stand at room temperature for 40 minutes
-To make the dough, stir the milk into the sponge
-In a medium bowl, combine all other ingredients
-Slowly add to sponge and milk mixture, stir to blend (will be thick)
-Lightly sprinkle work surface with flour
-Knead the dough until it becomes resilient and elastic (10-12 minutes)
-Spray large bowl with non-stick cooking spray, place the dough in the bowl, cover loosely with plastic wrap or a damp towel and let the dough rise in a warm, draft-free place until doubled in volume (*45-60 minutes)
-Preheat over to 475 degrees
-Punch down the dough
-Lightly sprinkle a work surface with flour
-Roll out the dough to a 16" circle
-Transfer to a pizza pan or large baking sheet
-Place crust in the oven for 5 minutes
-Remove heated crust from the oven and arrange the toppings of your choice
-Bake until lightly browned, about 10 minutes
*It's ok to prepare this dough and let it rise in the fridge if you need to leave it longer than 45-60 minutes.
