2 T olive oil
1 T lemon juice
1 1/2 T dried oregano
2 cloves garlic
2 T minced onion
1 1/2 t kosher salt
1 t fresh ground black pepper
1 lb boneless, skinless chicken breasts, cut into 1 1/2 " cubes
5 skewers - if using bamboo skewers, be sure to soak them in water first
While grill or grill pan is heating up, divide meat evenly among skewers.
Place skewers on the grill, being sure to hang any extra wooden part off of the edge (so they don't catch fire.) Grill for 4-5 minutes on each side, or until internal temperature is 165.
Serve with brown rice and a little tzatziki, if desired. Yum.
