Chicken Corn Chowder

Introduction

A very light chicken corn chowder A very light chicken corn chowder
Number of Servings: 8

Ingredients

    2 Boneless, skinless chicken breasts or 4 halves
    1 Bay leaf
    2 Tbsp butter
    1 onion, diced
    3 shallots, diced
    4 cubes chicken bouillon
    6 cup water or chicken broth, if using broth omit bouillon
    2 Tbsp dried parsley
    salt and pepper to taste
    2 Tbsp oregano
    2 Tbsp thyme
    4 potatoes, peeled and diced
    1 1/2 cup frozen corn kernels
    1 can cream style corn
    2 Tbsp fat free milk (optional)
    1/2 shredded cheese (optional)

Directions

1. Heat butter in large soup pot over medium heat. Saute onions and shallots for 3 minutes or until softened. Add chicken breasts, all fat trimmed. Add water and bouillon or broth and bay leaf and bring to a boil. Reduce heat and continue simmering until chicken is cooked through.

2. Shred chicken in the pot. Add potatoes, corn, cream corn, parsely, oregano, thyme, salt and pepper, simmer for about 45 minutes.

3. Remove from heat. If desired stir in milk and serve with a small handful of cheese.

Makes 8 1 cup servings
