Introduction

I LOVE TO MAKE THIS FOR MYSELF. JUST LIKE RESTAURANT PAELLA. I EAT 1/2 THEN SAVE THE REST FOR THE NEXT DAY IF I KNOW I'M GOING TO BE BUSY.
WE HAVE TO MAKE NICE MEALS EVEN IF WE LIVE ALONE.

Ingredients

    1 CHICKEN BREAST
    8 LARGE SHRIMP
    1 SMOKED TURKEY SAUSAGE , CUT INTO LITTLE RINGS
    1/2 CUP CHOPPED ONION
    1/2 CUP CHOPPED CELERY
    1/2 CUP CHOPPED RED PEPPER
    1 CUP SLICED MUSHROOMS
    1/3 CUP SHORT GRAIN RICE
    1 TSP ITALIAN SEASONING
    PINCH OF SAFFRON
    1 CUP V8 VEGETABLE JUICE
    1/2 CUP WHITE WINE
    1/4 CUP WATER
    SALT AND FRESH GROUND PEPPER, TO TASTE
    1/2 CUP FRESH OR FROZEN PEAS

Directions

CUBE CHICKEN IN TO BITE SIZE PIECES. SAUTE IN OLIVE OIL ALONG WITH THE ONION, CELERY AND RED PEPPER. COOK ABOUT 5 MINUTES. ADD RICE TO PAN ALONG WITH THE SAUSAGE AND COOK A FEW MINUTES OR UNTIL RICE START TO BROWN SLIGHTLY. ADD THE SEASONINGS. POUR OVER THE JUICE, WINE AND WATER. COVER AND COOK ON STOVE TOP ABOUT 15 MINUTES. REMOVE COVER ADD PEAS STIRRING IN. COVER AND LET THE PEAS HEAT THROUGH. ENJOY.
SERVE ALONG WITH A NICE SALAD.
