Kathy's Homemade Lasagna (12 svgs)

Introduction

Homemade lasagna; 9 x 13 x 3 pan Homemade lasagna; 9 x 13 x 3 pan

Ingredients

    Sauce:
    1 lb Italian Sausage links, cases removed
    1 c onion chopped
    1 c bell pepper chopped
    1 c mushrooms sliced
    2 cloves garlic minced
    15 oz can Hunts Spaghetti sauce, garlic and Herb
    14 oz can petite diced tomatoes
    8 oz can hunts tomato sauce

    Ricotta Cheese Mix;
    15 oz pkg part skim ricotta cheese
    1/2 c mozarella cheese, grated
    1/2 c parmesan cheese
    2 cloves garlic minced
    1 tbsp dried parsley
    2 eggs

    2 boxes Ready to Bake Lasagna Noodles (9oz boxes)

Directions

Sauce: Brown italian sausage in large pot, add in onion, bell pepper, garlic cloves minced and mushrooms, saute 7-8 minutes. Add in Hunts spaghetti sauce, petite diced tomatoes, and tomato sauce. Stir, bring to a simmer and lower heat. simmer 20 to 30 minutes. Turn off heat.

Ricotta Cheese mixture: 15 oz pkg Part Skim RIcotta Cheese in a large bowl, add in 1/2 c parmesan cheese, 1/2 c mozzarella, 2 eggs, dried parsley and 2 cloves garlic minced. Mix til well blended. Set aside.

In 13 x 9 x 3 pan, Spoon enough sauce in the bottom to cover lightly. Place down enough lasagna noodles to cover sauce, more sauce, then noodles again. Place 1/2 ricotta cheese mixture on noodles, spread evenly. sprinkle with 1/2 cup mozzarella cheese, noodles, sauce to cover, noodles, the rest of ricotta cheese mix, 1/2 c mozzarella, noodles, sauce to cover. Bake 350 degrees for 45 minutes covered with aluminum foil. Take foil off and sprinkle with last of mozzarella and a little parmesan, return to oven til cheese is melted and bubbly.
