I make this when I'm in a hurry, and love it for or with lunch. Sometimes I eat it alone, other times over lettuce leaves, or as a dip for tortilla chips. Ingredients

    black beans, 1 can, rinsed and drained
    Niblets corn (green giant), 1 can
    red bell pepper, 1/2 chopped
    1/2 cup any salsa
    *sour cream
    *avocado, chopped
    *green bell pepper, chopped
    *red onion, chopped
    * = optional (not included in nutritional info)

Directions

place all ingredients in medium bowl and mix.
