Balsamic Glazed Kangaroo Patties

Ingredients

250g minced kangaroo
1 tsp mixed herbs
1 tsp ground coriander
1/2 onion, finely diced
1 carrot, finely diced
1 stick celery, finely chopped
1 egg
1 tsp olive oil
Glaze:
1 Tbs balsamic vinegar
1 Tbs brown sugar
1/2 onion, chopped
2 tsp olive oil
Directions
heat oil in non stick pan, add carrot, celery and 1/2 onion.
Cook gently until softened
In a mixing bowl mix vegetable mixture with meat, herbs, spices and egg.
Mix together very well using hands.
Press firmly into 4 patties.
Place patties onto plate and leave in refrigerator for at least 1 hr.
Heat 2 tsp oil in non stick pan, cook patties, gently, turning once until browned and cooked through (about 10 min)
Remove patties from pan
Into hot pan put 1/2 onion and cook gently until softened. then add balsamic and sugar.
Stir and bring to boil. Cook until caramelised.
Add patties and turn in sauce. Cook gentlly until warmed through.
