Raspberry Chicken Spaghetti Salad

Introduction

Here's an original recipe of mine; a sweet & spicy, raspberry chicken tossed with spaghetti (or noodles) and served cold over a bed of crisp lettuce & bell peppers. If you are looking for something different, try this! Number of Servings: 4

Ingredients

    1 1/2 cups cooked chicken breasts, diced
    1/2 cup sweet yellow onion, diced
    1 cup celery, sliced
    1 tablespoon olive oil
    1/2 teaspoon garlic powder
    1/4 teaspoon salt
    1 dash pepper
    1/2 cup raspberry vinegar
    1/4 cup white sugar
    1/4 cup brown sugar
    1 T jalapeno pepper jelly
    2 cups thin spaghetti, cooked
    4 cups iceberg lettuce, thinly shredded
    1 green bell pepper
    1 red or yellow bell pepper (or 1/2 each)

Directions

In a large bowl, toss crisp iceberg lettuce and bell peppers (thinly sliced, lengthwise).

Put water on to boil and cook spaghetti while preparing remainder of the dish.

In a non-stick skillet, saute chicken, onion and celery in oil for about 3 minutes over medium heat.

Add garlic powder, salt and pepper, vinegar, sugars and jelly. Continue to cook and stir over medium heat until sauce cooks down and begins to thicken and turn syrupy. Remove from heat.

Stir in cooked spaghetti and mix well, remove pan from heat and allow spaghetti mixture to cool.

Divide salad into four individual serving bowls, then divide spaghetti mixture into four portions and serve over salad.
