Channel Catfish, 16 oz
Kraft Fat Free Italian Salad Dressing, 10 tbsp
Onions, raw, 1 medium chopped
Garlic, 3 cloves minced
Butter, unsalted, 1 pat
Red Ripe Tomatoes, 1 cup, chopped
Green Peppers (bell peppers), 0.5 cup, chopped
Marinate the catfish in the italian dressing for at least 30 mins.
1] Melt one pat of butter in a skillet, I prefer an electric skillet.
2] Sautee onion, garlic, green pepper and tomato until soft.
3] Add the catfish to the veggies and cook until completely done.
Serve with additional veggies and pasta

I didn't have italian dressing so I looked up a recipe for it and found the recipe for Olive Garden's Italian Dressing on SP. Also, I substituted nonstick cooking spray for the butter. It was very delicious. Fiance & I both loved the flavor. We will definitely make this again. Thanks for sharing. - 2/23/11
