Ingredients

4 whole wheat/low carb tortillas
4 wedges Laughing Cow fat free swiss cheese
8oz can tomato sauce + 1 tsp Italian Seasoning
16 slices Hormel Turkey Pepperoni
Veggies: onion, green pepper, mushrooms as desired
12 tbsp low-fat morzarella cheese
Directions
Warm tortillas in microwave for 20 seconds; Spread center 1/3 of each with one of the Laughing Cow cheese wedges. Top with 1/4 of the tomato sauce & seasoning (add garlic, other spices if you like), and 4 of the pepperoni slices (diced) and 1 tbsp or so of each veggie you like. Sprinkle with 3 Tbsp morzarella cheese. Fold in sides about 1" and then fold in 3rds. Place seam-side down on ungreased baking sheet and bake 10-12 minutes at 350 degrees.
I wrap them indivdually in foil and freeze; easy to pull one out to take to lunch and then reheat in microwave.
Options: You can do lots of variation on these -- spinach, chicken & feta cheese; fat-free refried beans, browned ground turkey, salsa & mexican low-fat cheese. Calorie count will vary with ingredients you choose.
