EmmaOh's Pecan Pie

Introduction

Personally, I think I achieved just the right amount of sweetness. Personally, I think I achieved just the right amount of sweetness.
Number of Servings: 10

Ingredients

    3 eggs
    1/2 cup granulated sugar
    1/2 cup brown sugar
    1/4 cup maple syrup (I use Grade B for deeper flavor)
    3-4 tbs unsalted butter, melted
    1 tsp vanilla
    1/2 tsp salt
    1 1/4-1/2 cup pecans

Directions

Preheat the oven to 350F.

On a cookie sheet, spread the pecans and toast them in the oven for 5-10 min. until the oil starts coming out. Take it out and cool.

While cooling the pecans --
If using a frozen pie shell, let it thaw for a while. Using a fork, make hole all over the pie shell so that it does not rise. Bake the shell for 10-15 min. until golden brown.

Chop the cooled pecans and set aside,.

For filling --
Whisk 3 eggs together. Add the sugars and maple syrup and mix. Then add the melted butter and mix until the sugars have dissolved and well blended - if using an electric mixer, mix for about 2 min. Add the vanilla and salt and mix.

Add the pecans to the pie filling. Pour the filling into the pie shell. Bake for 60 min. at 275F. Cool and serve.
