Lower Cholesterol Western Omelette

Introduction

I made this up and served as a sandwich for my hubby (he loves his eggs) and he really enjoyed it. I used one slice of bread for my portion. I willl definitely be making this one again! Ingredients

    1 lg. egg (whole)
    2 lg egg whites
    1/8 c. diced green bell peppers
    1/8 c. diced red sweet peppers
    1/8 c. diced yellow or orange peppers
    1/8 c. diced onions
    1 oz. Milk, 1%

    1/2 tsp margarine
    Pam cooking spray ( 2 sprays of 1 sec. each)
    Pepper to taste.

Directions

This recipe makes 2 portions of half the omelette each.

Spray cold frying pan with Pam for 2 seconds covering the whole pan. Turn element on stove to medium or med-hi temperature and pre-heat pan.

While pan is heating mix liquid ingredients together with a whisk until blended, add vegetables and re-mix.

Pour mixture into heated frypan, add pepper to taste, cover and cook about 5 minutes until bottom begins to brown. The omelette should be cooked through.

Cut in half. Lift 1 portion from pan and fold onto a slice of your favorite toast(this is where the margarine comes in). If you like. you may add another slice of buttered toast to make it into a sandwich or eliminate the toast underneath and serve it on the side.
