Mom's Potato Salad

Introduction

This is a family recipe, I pretty much eyeball this and adjust to my taste preferences. This is a family recipe, I pretty much eyeball this and adjust to my taste preferences.
Number of Servings: 12

Ingredients

    6 cups boiled potatoes
    1/4 cup light mayo
    1 - 1 1/2 tbsp mustard
    1/4 cup celery
    1/4 cup onion
    garlic powder to taste
    onion powder to taste
    3/4 small jar pimentos (with juice)
    2 tbsp chopped dill pickles
    pickle juice to taste
    salt to taste

Directions

Cool potatoes to where you can handle them (but still warm), then rough chop them to 1" pieces and put in bowl. Add all ingredients and mix till well blended. Cool in refrigerator until cool or ready to eat.
