Vidalia Onion and Nectarine Salsa

Number of Servings: 4


    1large Vidalia Onion
    3 tbsp sweet red peppers, finely chopped
    2 nectarines, halved and pitted
    2 tbsp fresh mint, finely chopped
    4 tsps Kraft Vildalia Onion Vinaigrette
    2 tsps Olive Oil


Preheat oven to 350.

Peel and chop onion into quarters. Chop nectarines into quarters. Mix together in bowl with olive oil. Spread onto boiler pan and bake for 4 minutes or until nectarine is soft. Let cool 3 or 4 minutes.

Chop onion and nectarine into bite-sized chunks. Mix with other ingrediants. Serve.

Makes 4 servings.
