Ingredients

14 oz Gimme Lean ground beef style
1 large onion, chopped
2 TB. chopped garlic
2 cups cooked rice or barley
½ tsp. freshly ground black pepper
1 can (10 3/4-oz.) low-salt, condensed tomato soup
½ cup water
1 cup raisins (optional)
4 cups coleslaw mix or shredded cabbage
1 can (14 oz) diced tomatoes in juice
Directions
Makes 6 servicngs. Time does not include cooking grain.
Preheat the oven to 400°F.
Cook Gimme Lean, garlic, and onion in 10-inch skillet over medium heat, stirring occasionally, for 8 to 10 minutes or until browned. Drain. Stir in rice, pepper, half of the soup, water (and raisins).
Place coleslaw mix or shredded cabbage in an ungreased 2-quart casserole. Pour juice from tomatoes plus about half the tomatoes over cabbage and stir in. Spoon beef mixture over coleslaw mix or shredded cabbage. Sprinkle reserved tomatoes. Add a little bit of water to the reserved soup, mix and pour over top. Cover and bake about 45 minutes or until hot and bubbly.
