Marinated Tomatoes, Onion, and Green Peppers

Introduction

This refreshing summer side dish goes well with any grilled meat, poultry, or fish. This refreshing summer side dish goes well with any grilled meat, poultry, or fish.

Ingredients

    4 large red, ripe tomatoes
    1 large red onion, thinly sliced
    1 large green pepper, thinly sliced

    3 T. extra virgin olive oil
    1 T. Pompeian Red Wine Vinegar
    1 t. Morton's salt substitute (or table salt or Kosher salt)
    1 t. Frank's Red Hot sauce
    1 T. lemon juice (or lime juice)
    1/2 t. garlic powder (or minced fresh garlic to taste)


Directions

Arrange sliced tomatoes, onion, and green pepper in shallow bowl. Mix remaining ingredients well and pour over all. Allow to marinate for several hours (or overnight) before serving. Serves 8.
