Sauteed Zucchini

Number of Servings: 4

Ingredients

    1 cup chopped onion
    1 tablespoon extra virgin olive oil
    3 1/2 cups sliced zucchini
    1 cup sliced fresh mushrooms
    1/4 cup chopped red bell pepper
    1/2 teaspoon salt
    1/4 teaspoon thyme
    1/4 teaspoon pepper
    4 ounces grated Mozzarella cheese

Directions

Saute onion and red pepper in oil in non-stick skillet until tender. Mix the spices in a small dish. Add zucchini, mushrooms, and the spices to the onion and red pepper. Cook over low to medium heat, stirring often. Cover for five to seven minutes to thoroughly cool vegetables. Sprinkle cheese, cover to melt and serve.
