Bacon wrapped Scallops - Halifax, Canadian style!

These are the best, most delicious, even a vegetarian turned non-vegetarian loved them the first time I ate them in a restaurant on our last cruise to Canada! I had to ask for the recipe and the chef was nice enough to share:) Very easy to prepare - if you use frozen scallops, just soak them in water in the refrigerator to defrost until you get home in the evening. Ingredients

Oscar Mayer center cut, low fat Bacon 8slices,
Scallops, raw, 4 large sliced in 2 each.
Maple Syrup, .25 cup
Pepper, black, 2 dash
Salt, if you like ( none added in the Nutrition data) 2 dash
Paprika, .25 tsp
Grapeseed Oil Spray,
Directions
Fry the 8 slices of bacon in a non stick pan for 30 seconds on each side or till cooked soft but, not crisp, should still be able to bend and mold it. Dry on a paper towel. Clean and rinse well of the sand, 4 scallops and dry on a paper towel. Slice the scallops in half. Wrap each scallop on its side, with a bacon slice and secure with 2 (pre-soaked in water ) tooth picks criss cross. Sprinkle the scallops with salt, pepper and paprika on top side.
Spray a pan with organic grapeseed oil spray. Place the scallops on this pan. Grill the scallops in the oven for 4-5 minutes on one side, apply maple syrup with a pastry brush. Turn over and grill until done, applying remaining maple syrup. As soon as the scallop is solid white in color, its done. If you like your bacon crisp leave in there a couple of minutes longer after brushing over with the maple syrup that has run into the pan. YUM!

I loved this recipe and it is fast to fix. However, I have a better recipe that is with 1/2 cup orange juice, 1 garlic clove, 11/2 tsp of fresh dillweed, 1 Tbsp Dijon mustard plus the 1/4 c maple syrup as a marinade poured over the bacon wrapped scallops for an hour before qrilling/broiling. Yum! - 8/5/09
