Healthy Potatoe Salad

Introduction

No fattening mayonaise in this salad. Lots of great Vegetables. Any White low fat cheese, even Jack or Swiss would be okay. Fresh Parsley is best. No fattening mayonaise in this salad. Lots of great Vegetables. Any White low fat cheese, even Jack or Swiss would be okay. Fresh Parsley is best.
Number of Servings: 3

Ingredients

    Steam Potatoes (A day ahead or several hours) and chill
    Chop all other ingredients. Scissors work well to chop fresh parsley. Mix Oil & Lemon juice and sprinkle over salad,and toss.

Directions

Approximately 3 servings, each 3/4 of a cup.
