Mexican Vegetable Veggie Crumble Hash

Ingredients

    1 12 oz. package Morning Star Meal Starter Veggie Crumbles
    1.5 tbsp olive oil
    1/2 onion, diced
    2 tbsp chili powder
    1 tsp cumin
    1/2 tsp minced cilantro
    5 oz shredded carrots
    1 10 oz package southwestern corn (frozen)
    diced tomato to taste

Directions

This quick to prepare meal is ready in about 20 mins.

Heat olive oil in pan

Add onions and cook for ~3 mins.

Add shredded carrots and cook until tender - approx. 5 to 8 mins.

As carrots and onions cook, cook southwestern corn mixture for 4 mins in microwave.

After carrots are tender, add Morning Star Veggie Crumbles and cook for 5 minutes.

Add seasonings (chili powder, cumin, cilantro) and mix well.

Add southwestern corn mixture when done and continue cooking until mixture is heated through.

I serve mine with a ~ 4 tbsp. of fresh, diced tomato on top (included in calories).
