Introduction

This recipe is especially easy to put together. Love for Mexican food inspired this recipe adapted by Bill Turner. It is great for a main meal served over lettuce or use as a dip with cut vegetables or chips. This recipe is especially easy to put together. Number of Servings: 11

Ingredients

    1# imatation crab
    1# salad shrimp
    1 large onion, diced small
    2 T finely chopped cilantro
    1 avocado, diced
    1 T lemon juice
    2 cups small diced tomato (about 3 roma tomatoes)
    1 jalapeno, finely diced (or to taste)
    salt to taste
    pepper to taste
    1/4 t garlic powder


Directions

Cut ingredients small and stir together. Refrigerate until ready to eat.

Makes about 8 cups. 3/4 cup equals 3 ounces of protein. I eat it over lettuce for dinner or lunch. Makes 11 servings. Use 1/4 cup for dip.

Keep unused portion refrigerated.
