    1 1/4 c. flour, sifted
    1 T. granulated sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1 egg
    2 T. canola oil
    1 T. lemon juice
    1 c. one-percent milk


Add lemon juice to milk in small bowl and set aside for five minutes. This takes the place of using buttermilk and cuts down on the fat content.

Preheat griddle after spraying with Pam.

1. Combine flour, sugar, baking powder, baking soda in medium size bowl.
2. Add egg, oil, and milk. Stir until just moistened.
3. Pour out batter onto heated griddle and turn over when done. Top with favorite pancake topping and enjoy.

Makes from 10-11 pancakes for me. You can add cinnamon, almond extract, or butter flavoring if you like to make them more interesting for your family.
