I came up with this randomly one day when there was little to eat in the house. I was surprised at how yummy it was! It's a great breakfast and a wonderful way to use leftover rice. To cut down on calories, use less or no cheese, and use a non-stick spray instead of olive oil. I came up with this randomly one day when there was little to eat in the house. Ingredients

1 tsp olive oil
2 eggs
1/2 cup cooked brown rice
1/3 cup frozen spinach, thawed
1 oz. cheddar cheese, shredded
salt, pepper, and garlic powder to taste (I used red pepper flakes instead of black pepper, and it was awesome!)
Directions
Heat the olive oil in a small skillet over medium-low heat. In a small bowl, mix together the rest of the ingredients. Put the mixture in the skillet, and cook until it's no longer runny, stirring occasionally.
