Tara's Mini Meatloaves (from the Biggest Loser)

Number of Servings: 9

Ingredients

    1 onion
    1 carrot
    1 stalk celery
    2 canned chipotle peppers in adobo sauce (set 1tbsp adobo sauce aside)
    1/2 oats
    2 egg whites
    20 oz Lean Ground Beef (I used 93/7 to calculate nutrition)

    Cupcake pan, or foil muffin cups

    Meatloaf Topping:
    1 tbsp brown sugar
    1/4 tsp organic ketchup
    1tbsp adobo sauce

Directions

1) Preheat oven to 350.
2) Pulse vegetables in a food processor.
3) Add chipotle peppers and pulse; return mixture to bowl.
4) Mix vegetable mixture with ground beef.
5) Once blended, fold in egg whites and oats, try not to overmix these.
6) Transfer mixture to baking pan/muffin cups. I used 18 foil muffin cups, but you may end up with more/less muffins depending on how big you make your muffins.

Bake for 20 minutes. This recipe makes 9 servigs.

Combine all ingreidents for meatloaf topping while meatloaf is baking. When meatloaf is finished, top mini-meatloaves with sauce and return to oven for 10 minutes.
