Number of Servings: 6

Ingredients

    1 large yam cut into cubes
    6 yukon potatoes cubed (small-medium sized potatoes)
    1 tbsp extra virgin olive oil
    3 Tbsp Apple cider vinegar or to taste
    1 tsp sea salt (or to taste)
    Cracked black pepper to taste
    2 sprigs fresh dill minced
    2 thin slices red onion diced (or to taste)

Directions

Place yams and potatoes in pot of water bring to boil and simmer 15 minutes or until fork tender.

Combine potatoes with remaining ingredients may be served warm or chilled.
