2 T. olive oil
2 medium sized onions
2 sweet peppers (any colour/ combination)
3 ripe tomatoes
4 oz. graded cheese
Saute the zucchinis, onions, and peppers in the olive oil on medium-high heat until cooked through.
Reduce heat to low and layer on the tomatoes and cheese.
Serve once the cheese is melted.
Creates 4 servings.
