Robin's Blender Vegetable Soup

Introduction

A delicious way to get in lots of veggies. A delicious way to get in lots of veggies.
Number of Servings: 7

Ingredients

    1 large summer squash (I prefer yellow)
    2 large carrots
    1 large tomato
    1 large scallion
    3 sprigs parsley
    1 chicken bouillion cube or 1 tsp. granules
    10 oz. water

Directions

-Chop veggies and put in large saucepan or soup pot with water and bouillion.
-Cook on medium until veggies are soft.
-Blend in small batches in blender and mix all together
-Makes 7 8-oz servings
