Creamy Chicken and Spinach Bake

Introduction

Spinach, chicken, and cheese combine for a one-dish dinner. Spinach, chicken, and cheese combine for a one-dish dinner.
Number of Servings: 6

Ingredients

    10 ounces Fresh Express Baby Spinach
    1/2 cup fat-free sour cream
    1/2 cup light mayo
    1 cup shredded mozzarella low moisture part skim cheese
    1/4 cup Parmesan cheese
    2 cups diced cooked chicken breast
    2 tsp garlic powder

Directions

Preheat oven to 350 F.

Steam spinach, then drain any excess water.

Combine sour cream, mayo, cheese, and garlic powder.

Pour half into a baking dish coated with cooking spray.

Top with the chicken and spinach, then the remaining cheese mixture.

Bake for 45 minutes.

Makes 6 servings (1 cup)

    I used plain yogurt for the sour cream, added an 8oz can of mushrooms and a 15.5oz can of diced tomatoes with garlic/onions. Without these additions, would have been too bland. - 9/28/09

    I made this the other night, adding 1/2 chopped sauteed onion. I also substituled greek yogurt for the sour cream. This made cal=245.2, Pro=34.1, sod when up=993.9. It was just as amazing. - 1/7/10

    Sooo Good! I will definitely make this again. I sub'd the sour cream for greek yogurt and added a bit more Mozzarella on top. I also used zucchini, yellow squash, mushrooms, and onion as filler with the spinach. - 6/22/10

    This recipe is great! I used 20 ozs of fresh spinach instead of the frozen kind. Also substituted the sour cream for non-fat cottage cheese, added some sweet peppers and mushrooms, served with couscous/rice/pasta- amazing! My boyfriend said he felt like he was eating at a restaurant! - 12/1/10

    So good ! My whole family loved this.. I subbed no fat greek yogourt for the sour cream, and sautéed an onion, and sautéed fresh spinach before mixing with the chicken. I also used the ready oven roasted chicken strips from Costco which save a lot of time/prep. Delicious.. the 3 of us ate it all - 9/1/10

    This was very good. I put it in the crockpot instead of the oven because I needed to be away. Probably won't do that again. The spinach was a bit bitter. And I used leftover turkey instead of chicken. I'll definitely make it again. - 12/3/10

    Finally got around to making it... it was really good... even my husband loved it! I served it over no yoke noodles. The only thing I cut down on was the parm cheese (One cup seemed like a lot) but it was still good and rich enough. - 5/16/10

    Wow..I just made this and it was deelish! I did change some things . I cooke the cubed chicken with garlic, onion, tumeric, a bit of sea salt & lemon pepper. Then I added fresh spinach, green peppers and tomatoes. Greek Yogurt instead of sour cream, grated parmesan cheese & minced garlic in mix. - 4/25/10

    Good recipe. I increased the veggies by adding mushrooms, onions and tomatoes. Unfortunately I over salted it, but that was my mistake. Has a rich taste. - 1/2/10

    This is so good! I used Perdue thin sliced chicken breasts (the already seasoned ones) and I added mushrooms, oinions and mixed it up with bow tie macaroni. DELISH! I'm having it for leftovers tonight! - 9/28/09

    I love it. I did add onions and mushrooms and extra spinach (my pkg was larger), baked in a 2 qt dish. Didn't cook chicken for 30 min before baking. Just stir-fried in pam w/ Mrs. Dash for a few minutes - saved a lot of cooking time. - 7/22/09

    Did a little different: used can spinach, pre-cooked chicken strips diced up and added diced tomatoes and some panko bread crumbs. I don't cook much but my husband said he liked it atleast three times while eating it! WOHOOOO!!! - 7/18/09

    I made it and loved it!! I used fresh spinach cut in pieces, 1/4 cup Mozzarelli Cheese, and 1 cup Parmesean...next time I will use less Parmesean as I try to trim down the salt. It will be a keeper. - 7/10/09

    This is amazing! I decided to use light miracle whip and 13.5 oz of fresh spinach instead. I also decided to try it over whole wheat linguine - A wonderful dish that will definitely be a hit with my husband. I might have to make a double batch next time! Its almost gone already! - 7/9/09

    We made this last night and it was great! However, using an 8" pie plate, I could barely get 4 dinner size servings, let alone 6 servings. Next time I might add an extra package of spinach to stretch it further. - 7/9/09

  • This dish had a somewhat salty taste and was kind of tangy. I added a can of mushrooms and I only used 1 tsp of garlic powder. Also I used frozen spinach (drained & squeezed the water out) and the spinach taste was very good. Not sure I would make it again. - 8/13/14

  • ok so my hubby and I made this together. We substituted the sour cream for Greek yogurt, we sauteed the spinach, onions, and one garlic clove together. We tripled the yogurt, mayo, and cheese to make enough for on the bottom and on top and then layered it with some more cheese. Smells Great! - 5/17/14

  • Delicious and will make again. The only problem is that the chicken was over cooked. I will try to either half cook it before adding the mix are not cook it before adding to the mix.
    BTW: I used fat free sour cream and mayo and it was still delicious. I also chicken quarter thighs with the bones in - 1/19/12

  • I do have to say, I did some modifications.
    I seasoned, then seared the chichen breast for 4-5 min. on each side. Then let cool before cutting.
    I substituted yogurt for sour cream, added tomatoes and mushrooms to fresh spinach, cooked till wilted, then followed the recipe.
