Grandma's Salmon Patties

Introduction

Number of Servings: 12

Ingredients

    1/2 cup EggBeaters or egg substitute
    1/2 cup Hellman's Light Mayonnaise
    1/2 cup chopped green onions or white/red onions finely diced
    Grated Lemon peel from 2 lemons
    Juice from 2 lemons
    2 tbsp fresh dill or 2 tsp dried dill
    1/2 tsp black pepper
    2 - 14 3/4 oz cans salmon, drained, flaked, skin & bones removed
    1/2 cup fine dry bread crumbs
    2 tbsp canola oil

Directions

Makes about 12 nice size salmon patties (1/2" to 3/4" thick)

First, open canned salmon and drain, separate to remove skin and bones. Once everything is removed, flake salmon with fork.

In a medium bowl combine the egg substitute, mayonnaise, green onions, dill, grated lemon peel, lemon juice and pepper. Add salmon and bread crumbs; mix well. Form mixture into 12 1/2-inch-thick patties. In a large skillet cook patties in hot oil over medium-low heat about 6 minutes or until golden brown, turning once.
