All-American Potato Salad

Ingredients

    2 pounds russet potatoes
    1 stalk of celery
    1/2 cup chopped green pepper
    1/4 cup sliced green onion
    1 cup of plain low-fat yogurt
    1 tablespoon Dijon mustard
    1 tablespoon chopped fresh parsley

Directions

1. Peel the potatoes and cut into 1 1/2 inch cubes. Place in saucepan with enough water to cover. Bring to a boil; cover and reduce heat. Simmer for about 10 min, rinse and drain.

2. Combine the potatoes, celery, bell pepper, and green onions in a medium bowl. Blend the yogurt and mustard in a small bowl.

3. Add the yogurt mix to the potatoes; mix well. Cover and refrigerate until serving time. Sprinkle with parsley just before serving.


MAKE AHEAD
Preparing this recipe up to 8 hours ahead will allow potatoes to absorb the dressing for maximum flavor.


**You can also add a tablespoon of Horseradish
