Ingredients

14 ounces salmon fillet pieces
1 tablespoon eggsubstitute
1 tablespoon water
3 tablespoons spinach dip (I used store bought)
2 tablespoons panko (Japanese) bread crumbs
1 tablespoon reduced-fat grated parmesan cheese
1 teaspoon black pepper
Directions
1. PRE-HEAT oven to 400 and lightly coat a baking dish with cooking spray.
2. RINSE the fish fillets in cold water and pat dry. In a small bowl mix the egg substitute and water. Dip the fish pieces in the egg wash and place in baking dish.
3. EVENLY top each fillet with the remaining items, in this order:
-- spinach dip
-- panko bread crumbs
-- parmesan cheese
-- black pepper
4. BAKE for 8 minutes or until the fish is done and flakes with a fork.
