Calypso Rice

Introduction

In Trinidad, to ridicule the slave masters, the natives and captives would make up witty lyrics to known melodies. Then, with their native style, they would back beat the parodies with their own rhythms. Calypso.

This side dish has many of the same Caribbean festival as the music that originated it.

Number of Servings: 8

Ingredients

    1 1/2 cups of vegetable stock
    1/2 cup no-sugar-added pineapple juice
    1/2 cup wild rice, uncooked
    1/2 cup brown rice, uncooked
    1 medium onion, chopped
    1 red bell pepper, chopped
    1 green bell pepper, chopped
    1 yellow bell pepper, chopped
    1/2 tsp turmeric
    1/2 tsp salt
    1/8 tsp black pepper
    1/4 chopped fresh parsley

Directions

1. In a medium saucepan, bring veggie stock and pineapple juice to a boil over high heat.

2. EXCEPT THE PARSLEY, stir in the remaining ingredients. (Now for part one of the Caribbean Wooden Spoon test.) Dip the handle of a wooden spoon into the pot. When you see or feel the rice touch the handle remove the handle and place your index and middle fingers next to the wet tip. If the length of the wet tip matches the length of your two fingers your have enough liquid. If not enough, add a little water until you pass the test. If too much, quite while your ahead.

3. Reduce the heat to low and allow to cook, covered, for 20 minutes.

4. Remove from the heat and let stand, covered, for 5 minutes. (Now for part two of the Caribbean Wooden Spoon test) Place the dried out wooden spoon handle on top of the cooked rice. If the tip is somewhat dry then all the liquid is absorbed. Fluff the rice with a fork and serve with fresh parsley sprinkled on top.

If the tip is quite damp, go ahead and fluff the rice, but allow it to rest uncovered a few minutes until the liquid is fully absorbed or evaporated off.

Serving size is 1/2 cup per person

+++Around my house when we serve Calypso Rice we chop up some dried fruit and serve it as a garnish as well. Also, to stay in the mood, we play some vinyl record albums of steel drum band music.+++
