Lemon Blueberry Muffins

Introduction

2 1/2 cups of flour
1 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 cup plain yogurt
2 eggs beaten
2 tsp. lemon zest
1 1/4 cup fo fresh or frozen blueberries
Streusel Topping
4 Tablespoons white sugar
4 tablespoons flour
2 Tablespoons butter
1/2 teaspoon cinnamon
2 1/2 cups of flour

1/2 tsp salt
1/2 cup butter
1 cup plain yogurt

1 1/4 cup fo fresh or frozen blueberries

Ingredients

    cinnamon2 1/2 cups of flour

Directions

In a large bowl mix together flour, sugar, baking powder, baking soda and salt. Cut in butter with pastry blender until mixture is crumbly. In small bowl combine eggs yogurt and lemon zest. Add all at once to flour mixture and stir just until combined. Gently fold in blueberries. Divide batter evenly into 12 large muffin tins. Combine streusel topping ingreidents until crumbly and top each muffin. Bake at 400 F for 20-25 minutes or until done.
