Chili Con Carne - South Beach friendly

Introduction

My regular Chili recipe with the Carrots and rice removed to make it South Beach Phase 1 friendly. Use 1-2lbs of beef. It doesn't make a lot of difference surprisingly. Ingredients

    1-2lb ground beef
    1 med onion chopped
    1 tsp minced garlic (2 cloves)
    2 celery stalks chopped
    1 cup chopped bell peppers
    1 can red kidney beans
    1 can chickpeas (drained)
    1 lg can diced tomatoes
    2 jalapeno peppers

Directions

in large pot fry ground beef, onion, garlic and celery until been is browned. Add remaining ingredients.
