Zucchini & Sweet Potato Latkes

Number of Servings: 18

Ingredients

    1 small red onion or 1 large shallot, grated and squeezed dry
    1 c. shredded zucchini, squeezed dry
    2 c. peeled and shredded sweet potato
    2 eggs, beaten
    3 T. flour
    1/8 tsp nutmeg
    1/4 tsp salt
    1/4 tsp pepper
    2-4 T vegetable (olive) oil

Directions

Makes 18 latkes (serving size is 1 latke).

1. Combine shallot (onion), zucchini, and sweet potato in a large bowl. Add eggs, flour, nutmeg, salt, and pepper; mix well.
2. Heat 2 T. oil in a large, heavy-bottomed skillet over medium-high heat. Drop heaping tablespoons of batter into skillet, about 1 inch apart. Flatten slightly with the back of the spoon. Cook about 2 minutes per side, or until golden brown. Drain latkes on paper towels. Add oil as needed and heat before cooking more latkes.

Makes 18 latkes; serving size is 1 latke.
