Israeli Couscous Salad

Ingredients

1.25 cups Tader Joes Harvest Grains Blend
2 cups Pacific Natural Foods Chicken Broth
2 cups raw Spinach
1/4 cup Olive Oil
2 tablespoons Balsamic Vinegar
Pepper to taste
1 crushed Garlic Clove
1 cup Cherry Tomatoes cut in half
3 Scallions sliced
1 cup chopped, peeled Cucumber
Directions
Makes 6 - 8 Servings
Bring Chicken Stock to a boil. Add Harvest Grains Blend. Cook 5-7 minutes or until all broth is absorbed and grains are al dente. Immediately stir in the spinach so it can wilt.
Chop vegetables and make dressing. Once the spinach is wilted. Remove the grains from the pot to cool. Once cooled and dressing and then stir in chopped vegetables. Serve warm or cool.
