1 lb. ground beef
2 cups Chunky Salsa
1 cup zucchini, chopped
1 tsp. chili powder
3 cups cavatappi pasta or any corkscrew noodles
1 1/2 cups frozen corn, thawed
1 cup Shredded Cheddar Cheese, divided
1 Tbsp. lime juice
1/4 cup chopped cilantro or fresh parsley
BROWN meat in large skillet sprayed with cooking spray on medium-high heat, stirring frequently; drain. Add salsa, zucchini and chili powder; mix well. Reduce heat to low; simmer 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.
ADD corn and 1/2 cup of the cheese to the meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.
DRAIN pasta; place in large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Sprinkle with remaining 1/2 cup cheese. Serve with lime wedges, if desired.
