2/3 cup (2 ounces) uncooked whole-grain penne
1 large portobello mushroom, sliced
1/2 cup canned cannellini beans, rinsed and drained
2 tsp olive oil
1 tbsp pine nuts, toasted
1/4 cup chopped fresh basil
2 tbsp grated Parmesan
Directions
Cook pasta al dente per package directions. Saute mushroom slices and beans in oil over medium heat for 3 to 4 minutes. Toss with all remaining ingredients.
